Yes they are "only doing their job" but their job is to act as the state's apparatus and suppress political dissent.

This guy was pounced on by some undercover cops, forced to the ground, and arrested. More police arrived shortly after, then in a blur, the arterial bloc arrived, un-arrested him, and that was that.

At the Nuremburg Nazi war crimes trials it was established that following orders or saying 'i was just doing my job' was no excuse. If those involved in Nazi atrocities had told their superiors to stuff off they would have been shot. The Police in Australia don't have it that bad, so the same standard should apply to them.
